last night i decided to experiment with the dredges of leftover food scrappies laying around the apartment. i don’t really have enough groceries to cook anything cool or interesting yet, but there’s no point in going to the store because we leave tomorrow, you know?
and for a while, i had no idea wtf i was doing at all, yet kept right on at it just because once i started i didn’t want to stop.
and thus, i created something that was actually quite yummy.
now, my something quite yummy needs a name…but i can’t think of one right now so i’ll just put what’s in it and keep going till i figure out what to call it.

- 1/2 package of hot italian sausage
- 1/4 chopped onion
- 1 jar tomato & basil sauce (ich, i know, but i had no ingredients!)
- 2 tb of minced garlic
- generous sprinklings of basil (mmm)
- about 1 cup leftover parsley, chopped up
- 1 pkg of ricotta & spinach tortellini
- approx. 1 cup grated parmesan & assorted parmesan sprinkles
first, i chopped up the onion leftover from lasagna fest. then i de-skinned & broke up all the sausage. next, dumping it all in a skillet and adding the garlic & basil. then i put on a pot of lightly oiled & salted water for the tortellini. i cooked the sausage/garlic/onion/basil yumminess until the meat was fully browned and the onions a nice translucent state (i’m slowly making my peace with onions). when the pasta was finally boiled to a right tender condition, carefully drained and set aside.
then, rinsed and washed the big pot i used for the pasta and dumped in the sauce. started a low heat and added the sausage/garlic/onion/basil mess. slowly stirring and raising the heat to medium i added some more dried minced onion & italian seasoning. next, i chopped the fuck out of some parsley and dumped it all in there — it added a pleasant thickness and such. a sprinkle of oregano and some more basil (i freaking love that stuff), and additional seasonings to taste. also, it smelled really good.
finally, i was worried that there wasn’t enough cheese (lasagna was extra cheesy, it took a lot) and didn’t know wtf i was going to do with it all. pasta and sauce? pasta in sauce, etc.? it was all really confusing. when it came down to the wire, it all got dumped into my spiffy casserole dish. pasta first, then sauce. then i dumped as much cheese as i could on top to cover the whole thing. a sprinkling of seasoning and it went in the oven for 30 min at 350F.
fuckin’ yummy as shit.
i should totally make up recipes as i go all the time.
