last night was all about the watermelon mojitos. now, normally i’m not a fan of mojitos; they have two things i’m not really fond of (separately or together): limes and mint. but i got some delicious mint from my boston organics delivery and i didn’t want to let it go to waste.
a little rum, a little fresh, delicious watermelon and some limes and we were ready to go. now, i don’t have pictures of our actual drinks, but mother of god they were delicious!
here is the base recipe i used:
Watermelon Mojito
3 cups 1/2-inch cubes watermeloni diced up about 1/2 to 2/3 a fresh baby sugar melon, seedless12 medium to large fresh mint sprigsactually, maybe a 1/4 cup densely packed or full cup loosely packed mint leaves6 tbsp fresh lime juice1 3/4 freshly squeezed limes2 tbsp granulated sugar2 tsp for muddling, 1/4 cup SIMPLE SYRUP in the blender of watermelon6 oz. light rum1.5 small bottles of bicardi, the 750 mL bottles (what? i like my rum!)- 4 lime slices & watermelon cubes for garnish
- 4 mint sprigs
Place watermelon cubes in a blender. Blend until smooth. (i added the simple syrup to the watermelon, and a handful of ice cubes)
In a small pitcher, combine fresh mint leaves, sugar, and fresh lime juice. Using the handle of a wooden spoon, muddle the ingredients to release the oils from the mint. (did this part in a glass)
Take care not to muddle to the point where the leaves fall apart. Pour rum and the watermelon puree into the pitcher and stir gently.
seriously, though? they were fucking delicious. and REFRESHING. oh man, i love watermelon on the best of days but after this weekend? i’m obsessed!
