last night was cinco de mayo, and i was completely unprepared. it scrambles up on me unawares. plus so far the work week is eating my soul and i just don’t make it home early enough to do anything worthwhile. i’m getting better, but it’s hard.
the boy has a spiffy new schedule which means we actually get to spend some time together, this is huge…
and after tackling the insanity that is our kitchen (the less time you spend at home, the messier it gets…FACT) i managed to scrape together an ooey, gooey, cheesy mess of delicious chicken enchiladas. and the boy finished off his fancy mexican tequila.
oh boy, am i tired. got up and have been on my feet cooking and preparing tasty foods for the super bowl all damn day. did not sit down until about 1/2 an hour ago.
insanity!
and now the game has started and i’m already sick of peyton manning’s face but puppy bowl is in fine form today. how excited am i for kitty halftime show? SO EXCITED!
i made lots of tasty foods this weekend. most notably, trying out my new bundt pan and a new cake recipe. the only downside was i made way too much chocolate ganache and had no idea what to do with it (horrible, horrible, i know, right?)
oh well, i’ll have to adjust my recipe for that one next time.
this weekend’s fare included the aforementioned cake, pan seared steaks with a red wine mushroom sauce & rosemary and garlic roasted potatoes, and homemade chicken pot pie (everything from scratch, including the crust!)
yesterday it was homemade pizza:
plus the glaze for my dulce de leché cheesecake squares. plus old fashioned strawberry shortcake from scratch.
today it’s homemade rosemary focaccia, grilled chicken pressed sandwiches on said focaccia with fresh farm market lettuce and sundried tomato pesto. garlic sautéd broccolini on the side, and homemade strawberry poptarts made from the tiny super sweet farm market berries i got.
seriously, i need a bigger fuckin kitchen.
been thinking up cocktails with my homeboy shanikqua…and now he has a spiffy new blog for all sorts of deliciously intoxicating creations: the barman cometh.
tonight’s idea, specifically, is awesome topped with fantastic.
makes me want to bust out the ol’ graduated cylinder and spend rent on liquor cabinet restocking.
